Since our AMAZING hotel included complimentary breakfast, which we always caught pretty late, we tended to skip lunch.  This resulted in us getting hungry at odd times in the afternoon.  We stumbled across Elisir di Positano during exploration of this picturesque coastal town.  We enjoyed a little “snack” of sorts here.

Caprese Salad
Italians do simplicity extremely well.  The tomatoes were juicy and sweet.  The olive oil was rich and deeply flavorful.  The cheese was sweet and creamy.  Everything was spot on.

Eggplant Parmesan
The Annoyer and I are quite partial to most things eggplant.  We really enjoyed the eggplant parmesan here.  It didn’t feel too heavy, too bready, too oily, too cheesy, or too dry.  Delicious!

It would be hard for me to give a really accurate assessment of Elisir di Positano since we only had 2 dishes here, but we were pleased with our light pre dinner “snack.”
